we made a healthy twist on a classic orange poundcake with protein — spoiler alert: it tastes delicious!
High-protein plenti orange poundcake
using our vanilla flavor protein powder.
Ingredients:
4 eggs: 3 egg whites + 1 whole egg
¾ cup monk fruit or stevia
1 ⅓ cup flour of your choice)
1 scoop of @plenti.supps vanilla protein
¾ teaspoon baking powder
⅓ to ⅔ cup melted coconut oil
1 large orange (juice from ½ if large + zest for the mixture and for decoration)
1 lemon (juice from ½ lemon + zest for the mixture and for decoration)
A pinch of salt
Instructions:
- Preheat the oven to 340°F.
- In a bowl, beat the 3 egg whites with the monk fruit until foamy.
- Add the flour and @plenti.supps protein to the foamy mixture.
- In a separate bowl, mix the remaining wet ingredients: coconut oil, orange juice, lemon juice, and the whole egg.
- In the same bowl, add the orange and lemon zest and mix.
- Add this liquid mixture to the egg whites and mix again.
- Pour the mixture into a loaf pan or cake mold of your choice and bake for 40 to 45 minutes.
