Ingredients

300g ripe bananas (about 2–3 medium bananas)

3 eggs

1 tsp vanilla extract

2 tbsp honey (optional)

160g oat flour
-
31g plenti vanilla protein powder (about 1 scoop)

2 tsp baking powder

1/2 tsp baking soda
-
Pinch of salt

1 tsp ground cinnamon

55g sugar-free chocolate chips, plus extra for topping
Instructions

Preheat oven: Preheat your oven to 350°F (175°C). Line a loaf pan with parchment paper.

Mash bananas: In a large bowl, mash the ripe bananas until smooth.

Add wet ingredients: Add eggs, vanilla extract, and honey (if using). Mix well until combined.

Add dry ingredients: Stir in oat flour, plenti protein powder, baking powder, baking soda, salt, and cinnamon until fully combined.

Fold in chocolate chips: Gently fold in the chocolate chips.

Bake: Pour batter into the prepared loaf pan and sprinkle extra chocolate chips on top. Bake for 40 minutes at 350°F (175°C).

Finish baking: Cover loaf with aluminum foil, reduce oven temperature to 250°F (120°C), and bake for 10 more minutes.

Cool + slice: Remove from oven and let cool completely before slicing.
